5 Easy recipes for your lunch-box

If you are not a big fun of sandwiches and want to cook your lunch, get inspired with some easy recipes for your lunch-box! 

As I moved out abroad to do my master, I started to cook my meals and bring my lunch box every day. it was a huge money-saving and besides, I am not a real sandwiches lover. I find them very easy, boring and not much healthy, so I decided to save money and eat better cooking my meals as much as possible. As I graduated and started to work I didn’t change my habits and now I bring my lunch box to work every day.

There are those days in which I have no idea what to cook and I spend my commute home getting inspirations from food blogs.So I decided to take note of some of my favorite easy meals for my lunch box. Bear in mind I am not a chef, I am just learning by doing and I think this is the fun part too!

Here you find some easy recipes to try. The characteristics are:

-easy to cook

-cheap budget

-main / single course (fit in a lunch box)

1. Couscous with chicken and veggies

ingredients for 2 people:

  • 170 g of Cous cous
  • 1 aubergine
  • 2 carrots
  • 1 courgette
  • 1 red pepper
  • 200 g of chicken breast
  • 1 onion
  • 1 teaspoon of curry powder
  • vegetable broth
  • extra virgin oil, salt and pepper
  • parsley
  • nutmeg

Procedure:

-Clean the vegetables and chop them Easy recipes

-Peel and finely slice the onion

-Heat two tablespoons of oil in a frying pan

-Brown the onion

-Scatter across the vegetables and let them cook for about 5 minutes with a pinch of salt

-Place the chicken breasts on a chopping board and cut them in small pieces

-When the vegetable are softer, add the chicken in the pan and cook until is brown both sides

-In the meantime boil some water (half a pot) and melt the vegetable stock

-Put the couscous in a bowl and cover with salted boiling water. leave to fluff up (should take 5’)

-Mix together chicken, vegetables, couscous. Season with parsley, salt, pepper and nutmeg

2. Spinach Quiche

ingredients for 6

  • 2 eggs
  • bag of frozen spinach/ fresh spinach
  • a roll of puff pastry
  • salt and pepper
  • a box of ricotta (250 g)

-Preheat the oven at maximum temperature

-Boil the spinach in a saucepan with salted water

-Whisk the two eggs with pepper and salt in a bowl

-Drain the spinach and place them in the bowl with eggs

-Add Ricotta to the bowl

-Mix all together

-Unroll the puff pastry in a baking tray

-Pour the content from to bowl to the tray.

-Bake for 25’ until the pastry is gold and brown

3. Risotto prawns and courgettes

Easy risotto recipe perfect to impress your date 🙂

ingredients for 2

  • 1 courgette
  • 100 g of prawns
  • 200 g of rice (Carnaroli/Arborio)
  • 1 vegetable stock
  • 1 onion and garlic
  • extra virgin oil, salt and pepper
  • fresh parsley

-Clean and wash the prawns

-Clean and slice the courgette

-Boil some water and melt the vegetable stock in it

-In a large saucepan heat 1 tablespoon of oil with chopped garlic and onion for a few minutes

-Add the dry risotto, stir together and saute’

-Pour half a cup of vegetable broth and stir until the stock has disappeared

-Add the Courgettes and prawns and keep pouring the stock until the rice is ready

-Season the fresh parsley

4. Lentils with chicken (your protein boost)

This is one of the easy recipes perfect for a post workout as the amount of protein is pretty high chicken lentils easy recipes

Ingredients for two:

  • 1 tablespoon of oil
  • 50 g of lentils
  • 200 g tomato sauce
  • 1 carrot
  • 1 garlic clove, thinly sliced
  • 2 chicken breasts
  • 1 celery
  • Half glass white wine
  • rosemary
  • salt and pepper

– Slice garlic and onion

-Chop celery and carrots

-Heat a tablespoon of oil in a wide saucepan

-Tip onion and garlic and cook for 5 minutes

-Add diced chicken breasts and cook each side with the white wine until lightly brown

-Pour tomato sauce

-Season with rosemary and add lentils

-Cover and simmer for 20-25 minutes. Add a glass of water if it’s too dry

-Season with salt and pepper

5. Mushroom tagliatelle

Ingredients for two:

  • 200 g tagliatelle
  • a pack of tenderstem broccoli
  • 1 onion
  •  one pot sour cream
  • 1 punnet chestnut mushrooms
  • 1/2 lemon
  • 1.5 tsp mild paprika
  • water

-Cut the broccoli

-Slice the mushroom thinly

-Zest the lemon

-Halve, peel and chop the onion

-Boil water in a large saucepan with salt

-Heat some oil in a frying pan and cook the mushrooms until browned. Stir occasionally

-Add the onion in the same pan and cook for 5 minutes. After that, add paprika and sour cream

-When water boils in the saucepan, add the tagliatelle and after 3 minutes add the broccoli

-Toss pasta and broccoli into the pan, add salt and pepper and serve!
